DCL Instant Yeast (IDY) is available in two types:

Red Label
a standard yeast for lean doughs, containing less than 5% added sugar.

Brown Label
an osmotolerant variant for high sugar doughs, containing 5% or more of added sugar by weight of flour.

DCL Instant Yeast is ready for immediate use. It can be added directly to the flour and lightly dispersed before adding the other ingredients and normal mixing. Pack sizes available are 11g, 500g and 10kg sachets.
